Healing, healthy beet and bean salad!

Beet and bean salad

This is part of my supper tonight, a lovely beet and bean salad over a bed of super greens – healthy and healing!

1 can beets – sliced. Drain juice into a glass and drink!
1 can black beans, drained
1 cucumber – cut up
3-4 tomatoes – sliced
5 green onions (shallots)
2 cloves of garlic – minced
Olive oil, Balsamic vinegar, toasted sesame oil, salt and pepper plus any other herbs you wish to add!

Feel free to substitute other veggies or beans to go with the beets! The power duo is the beets and beans!!

Beets are wonderful for the immune system! Black beans are fortifying! Onions and garlic do more than just season food, they’re also good for the immune system!

I’m going to have some leftover noodles with fried onions and mushrooms once I finish my salad!
